The Best
White Chicken Chili Soup
(w/Lime)
2½ C water
¼ t lemon pepper ~ more if you like hot -
1 t ground cumin
1 T olive oil
4 boneless chicken breasts
Simmer 20-30 min. till tender & juices run clear. Remove & shred - or cut in bite sized pieces. Then return to broth.
Add:
1 clove garlic (or less, or none) finely chopped
1 C ch. onion
16 oz can white corn, optional
1 8 oz green chilies (or 4 oz)
1 tsp cumin,
2-3 T lime juice
28 oz (or 3 cans) white beans (undrained ~ I use S&W)) - one put in blender & blend
Boil - simmer 45 min
Sprinkle jack cheese when serving
