PAN SIZE 2-3 qt:
¼ C butter
3 eggs
¾ C milk
¾ C flour
PAN SIZE 3-4 qt:
⅓ C butter
4 eggs
1 C milk
1 C flour
PAN SIZE 4-4½ qt:
½ C butter
5 eggs
1¼ C milk
1¼ C flour
PAN SIZE 4½-5 qt:
½ C butter
6 eggs
1½ C milk
1½ C flour
Heat oven to 425°
Measure pan size by using qt jar of water. Put butter in heavy cast iron skillet or baking pan. Put in oven. Then quickly put eggs into blender, beat at high speed 1 min. With machine still running, slowly add milk and flour, blend 30 seconds. Put in hot buttered pan.
Bake 20-25 min
Serve with any fruit toppings or hot syrup. Sprinkle with powdered sugar and squeeze fresh lemon juice on.
