Green Tomato Mince Meat
8 C chopped green tomatoes
1-1½ C cider (appox)
8 C apples chopped unpeeled
1½ lb raisins - about 4½ C (not ground)
1 lb ch. dates (optional)
2 C honey
1⅓ C cider vinegar
2 T gr. cinnamon
2 t gr. cloves
1 t gr. allspice
1 t gr. ginger
¼ t pepper (not Maxine)
2 T grated orange peel
Drain chopped tomatoes ~ 15 min & replace the juice with same amount of cider.
Combine everything in alum. pot [printed recipe above suggests a NON aluminum pot] - simmer till thick ~ approx 2 hrs
Wash 10 pint jars - 5 qts
Process in boiling water ~ 15 min pints ~ 20 min quarts [printed newspaper recipe above has additional instructions]
(PS: You can add butter if you want when you make a pie, but NOT before canning mixture.)
