QUINOA SALAD

1¼ C quinoa (rinse) + cook (use chicken broth - lg. bowl) according to directions
1 lb chicken breasts - stir together*
1 t chili pwd.
Zest of 1 lime
2 t oil
½ t each salt & pepper
Rub chicken & place under hot broiler. Turn once till browned & done - 12 min ~ cut & add to quinoa.
Add:
¼ C lime juice
½ C chopped fresh cilantro
4 lg oranges peeled & segmented
2 ripe avocados cubed
3 T oil
1 t salt Kosher (& pepper )
*Rub on the chicken - grill
