Parkerhouse Rolls
[Suz says these were Mom’s favorite!!!]
PORTIONS:
SMALL ~~~ LARGE
1 C milk ~~~ 2½ C.
½ C oil ~~~ 1¼ C.
6 T sugar ~~~ 15 T sugar
salt ~~~ 2 t salt
1 C unseasoned mashed potatoes ~~~ 2 C
2 eggs well beaten ~~~ 5
2 tbls yeast / ½ C warm water ~~~ 5 T / ¾ C
5 C flour ~~~ 12½ C
Beat to form thick smooth batter. Add flour to moderately stiff dough. Knead 2 minutes to ball. Rise double. Make into rolls, rise double again (almost)
350° ~ 10 - 12 min.
