Pita Bread
1 T yeast
1¼ C warm water
3 C flour
1 t salt
1 t sugar
Dissolve yeast in water in lg. Bowl - let stand 10 min. Add flour - salt & sugar. Mix well & knead till smooth.
Divide into ⅛ ths - Roll out each to 4x6” circle. Place on floured wax paper squares - let rise till slightly puffed ~ about 45 min. Turn onto ungreased cookie sheet. Carefully peel off wax paper. Bake 500° ~ 5-10 min.
Turn over halfway through the bake time - about 2 min. each side. Bread will be mostly white. Remove & stack. Cover with towel till steam escapes. Makes 8.
