Spicy Roasted Eggplant
Ingredients
- 1 lb eggplant
- ¼ tsp ground pepper
- 1 T vegetable oil
- 2 tsp garlic chili sauce OR 1 tsp coarse salt, fresh chili peppers, and fresh garlic
- 1 tsp toasted sesame oil
- 2 T fresh lime juice
- 2 T sesame seeds
To Prepare
- Slice eggplant into ¾-inch-thick rounds; cut each round into ¾-inch-wide strips.
- In a small bowl, combine sauce ingredients; drizzle over eggplant, and toss to coat.
- Transfer to a broiler-proof rimmed baking sheet; broil, tossing once, until eggplant is browned and tender (about 10 minutes).
