Spicy Roasted Eggplant

1 eggplant

Ingredients

  • 1 lb eggplant
    • ¼ tsp ground pepper
    • 1 T vegetable oil
    • 2 tsp garlic chili sauce OR 1 tsp coarse salt, fresh chili peppers, and fresh garlic
    • 1 tsp toasted sesame oil
    • 2 T fresh lime juice
    • 2 T sesame seeds

To Prepare

    1. Slice eggplant into ¾-inch-thick rounds; cut each round into ¾-inch-wide strips.
  1. In a small bowl, combine sauce ingredients; drizzle over eggplant, and toss to coat.
    1. Transfer to a broiler-proof rimmed baking sheet; broil, tossing once, until eggplant is browned and tender (about 10 minutes).
