A New Orleans classic! This version (my own variation) cooks off all the alcohol in the process, so the traditional flambé isn't done. Safer, but less of a spectacle.
Ingredients
- 4 T butter
- 1 cup dark brown sugar
- 2 bananas
- 6 ounces dark rum
- ½ tsp ground cinnamon
- Vanilla ice cream
To Prepare
- Over medium heat, melt the butter and add the brown sugar
- Let this caramelize for about 5 minutes, then stir in the rum (the sugar may harden briefly - just keep stirring); cook for 3 minutes
- Add the bananas and cinnamon; cook for another 2 minutes and remove from heat
- Pour over ice cream
