Crushed Lentil Soup
Ingredients
- 1 T olive oil
- 2 large onions, chopped
- 2 cloves garlic, minced
- 8 cups water
- 1 cup split lentils, rinsed
- 1½ tsp sea salt
- 1 tsp cumin
- 1 tsp ground coriander
- ½ teaspoon pepper
- ½ teaspoon red pepper flakes
- 1 pinch saffron
- 2 T white rice, uncooked
- ¼ cup lemon juice
To Prepare
- Heat oil in a saucepan, sauté onions and garlic over medium heat for 10 minutes.
- Add remaining ingredients, except lemon juice, and bring to boil.
- Cover and cook over medium heat for 25 minutes.
- Puree (if pureed outside of saucepan, return to saucepan and reheat).
- Stir in lemon juice and serve.
