Crushed Lentil Soup

Ingredients

  • 1 T olive oil
    • 2 large onions, chopped
    • 2 cloves garlic, minced
    • 8 cups water
    • 1 cup split lentils, rinsed
    • 1½ tsp sea salt
    • 1 tsp cumin
    • 1 tsp ground coriander
    • ½ teaspoon pepper
    • ½ teaspoon red pepper flakes
    • 1 pinch saffron
    • 2 T white rice, uncooked
    • ¼ cup lemon juice

To Prepare

  1. Heat oil in a saucepan, sauté onions and garlic over medium heat for 10 minutes.
  2. Add remaining ingredients, except lemon juice, and bring to boil.
  3. Cover and cook over medium heat for 25 minutes.
  4. Puree (if pureed outside of saucepan, return to saucepan and reheat).
  5. Stir in lemon juice and serve.
