Dry Tofu Stir-fried with Pork (香干炒肉)

Ingredients

  • ¾ lb dry tofu (豆乾 / 香干), thinly sliced
  • ½ lb fatty pork, thinly sliced, with fat separated (but kept)
  • 2 long green peppers, sliced into strips
  • 10 red chili peppers, sliced lengthwise
  • 1 T ginger, thinly sliced
  • 1 bunch scallions, chopped coarsely and separated into white and green parts
    • 3 tsp light soy sauce
    • 1 tsp sesame oil
  • salt to taste
  • vegetable oil for stir-frying

To Prepare

    1. On medium heat, quickly stir-fry the dry tofu until it begins to brown
    2. Add long green peppers, the green portion of the scallions, and salt; stir quickly until peppers are cooked (2-3 minutes)
    3. Remove mixture from pan and set aside
    4. Add more oil and allow it to get hot, then add pork fat and stir for 1 minute
    5. Add red chilies, ginger, and white portion of the scallions; stir for 1 minute
    6. Add pork slices and stir for 1 minute
    7. Add salt and stir until the outside of the pork is fully cooked (about 1 minute)
    8. Return dry tofu mixture back to pan
    9. Add light soy sauce and sesame oil; stir for 2 minutes
