Ingredients
- Steamed Bun Dough
- 4 salty duck eggs (鹹蛋)
- 50 grams butter (牛油)
- 55 grams (¼ cup) sugar (白糖)
- 14 grams (3 tsp) corn starch (粟粉)
- 8 grams (2 tsp) custard powder (吉士粉)
- 2 grams ( ½ tsp) coconut powder (椰粉)
To Prepare
- Make the steamed bun dough per the linked instructions
- Boil the salty duck eggs until fully cooked (10 minutes)
- Remove the egg yolks and mash them
- Evenly mix all filling ingredients together and place in the refrigerator until firm (at least 1 hour; about the time it takes for the dough to rise)
- Stuff the buns with 1-2 T of filling and steam per linked instructions
