Chicken Tikka

Ingredients

    • 1 cup plain yogurt (I have also used strawberry in the past)
    • 1 cup cilantro, chopped
    • 2 T ginger paste
    • 3 T garlic paste
    • 3-4 T garam masala
    • 2 dry red chillies, chopped
    • 1 lb chicken (thigh is more tender) skinless and cut into 2" chunks
    • 1 lemon, sliced into wedges

To Prepare

    1. Mix cilantro, ginger, garlic, garam masala, and chillies (if you have a food processor, you can blend them)
    2. Add yogurt, mix well, and stir in chicken until thoroughly coated
    3. Cover the bowl, refrigerate, and allow to marinate overnight
    4. Preheat your oven to a medium-high temperature (like 200C or 400F)
    5. Thread the chicken onto skewers, place the skewers in the oven (with a tray underneath to catch drippings), and roast open till the chicken is fully cooked (perhaps 20 minutes)

To Serve

Squeeze lemon juice over the chicken to taste. A nice accompaniment would be grilled peppers and onions.
