Ginger Cookies (Mom's)

Ingredients

    • 1½ cups sugar
    • 1 cup margarine / butter
    • 1 egg
    • 2 T molasses
    • 1½ tsp lemon zest
    • 3 cups flour
    • 2 tsp baking soda
    • 2 tsp cinnamon
    • 1 tsp ground ginger
    • ½ tsp salt
    • ½ ground cloves

To Prepare

    1. Cream the margarine and sugar together
    2. Add the egg and beat until fluffy
    3. Mix in molasses and lemon zest
    4. Combine remaining dry ingredients and mix together with wet ingredients
    5. Chill dough for at least 2 hours
    6. Roll and cut on lightly floured surface
    7. Bake at 350 degrees, on ungreased cookie sheets, for 8-10 minutes
    8. Cool on a wire rack
