Ginger Cookies (Mom's)

Ingredients
- 1½ cups sugar
- 1 cup margarine / butter
- 1 egg
- 2 T molasses
- 1½ tsp lemon zest
- 3 cups flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp ground ginger
- ½ tsp salt
- ½ ground cloves
To Prepare
- Cream the margarine and sugar together
- Add the egg and beat until fluffy
- Mix in molasses and lemon zest
- Combine remaining dry ingredients and mix together with wet ingredients
- Chill dough for at least 2 hours
- Roll and cut on lightly floured surface
- Bake at 350 degrees, on ungreased cookie sheets, for 8-10 minutes
- Cool on a wire rack
