Ingredients
- 2T vegetable oil
- 1 large onion, chopped
- 1 large green pepper, chopped
- 2 cans stewed tomatoes, chopped
- 1 can chicken broth
- 1 can black beans, drained
- 1 can pinto beans, drained
- 1 can kidney beans, drained
- 1 cup hot salsa
- 1 tsp cumin
- sour cream and/or shredded cheddar cheese
To Prepare
- In a large pot, sauté onion and green pepper in vegetable oil
- Add tomatoes, broth, beans, salsa, and cumin
- Bring to a boil, reduce to a simmer and cook for 30 minutes
- Serve in bowls garnished with sour cream and/or cheese
