Sweet Potato Pie

Ingredients
- 1 pie crust (perhaps Pillsbury's)
- ¾ cup sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 tablespoons flour
- 1 teaspoon salt
- 2 cups sweet potatoes, cooked (or canned)
- 1 cup evaporated milk
- 3 eggs
- 2½ tablespoons butter
- 1 teaspoon vanilla
- brown sugar (optional; for garnish)
To Prepare
- Combine all ingredients (except pie crust and brown sugar)
- Pre-bake pie crust for 20 minutes at 425 degrees
- Pour in filling and bake at 350 degrees for 50 minutes (or until knife inserted halfway between center and edge comes out clean)
- Sprinkle brown sugar on top
- Cool on a wire rack
