Sweet Potato Pie

Ingredients

    • 1 pie crust (perhaps Pillsbury's)
    • ¾ cup sugar
    • 1 teaspoon cinnamon
    • 1 teaspoon nutmeg
    • 2 tablespoons flour
    • 1 teaspoon salt
    • 2 cups sweet potatoes, cooked (or canned)
    • 1 cup evaporated milk
    • 3 eggs
    • 2½ tablespoons butter
    • 1 teaspoon vanilla
    • brown sugar (optional; for garnish)

To Prepare

    1. Combine all ingredients (except pie crust and brown sugar)
    2. Pre-bake pie crust for 20 minutes at 425 degrees
    3. Pour in filling and bake at 350 degrees for 50 minutes (or until knife inserted halfway between center and edge comes out clean)
    4. Sprinkle brown sugar on top
    5. Cool on a wire rack
