Ingredients for the Streusel Topping
- ½ cup brown sugar
- ⅓ cup all-purpose flour
- ½ tsp ground cinnamon
- ¼ cup butter
Ingredients for the Cake
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ teaspoon salt
- ½ cup vegetable oil
- 1 cup white sugar
- 1 egg
- 1 tsp vanilla extract
- ¾ cup milk (or soy milk)
- 1½ cup fresh blueberries
To Prepare
- Heat oven to 350 degrees F (175 degrees C)
- Make the streusel topping by mixing the brown sugar, flour, and cinnamon, then cutting in the butter. Shred the butter with a fork until the mixture is crumbly and set aside.
- Mix the dry cake ingredients, add the wet, and stir in the blueberries until everything is just combined (try not to over-stir).
- Pour the cake mixture into an 8" round pan and cover evenly with streusel topping.
- Bake for 1 hour, then remove from oven and place on a wire rack. Cool for at least 5 minutes before serving.
