Ingredients

    • ½ medium onion, chopped
    • 4 cloves garlic, minced
    • 1½ tomato, chopped
    • 1 potato, boiled and cubed
    • 2-3 dried chilis
    • 1 T cumin seeds
    • 2 tsp ground turmeric
    • 2 tsp chili powder
    • 2 tsp ground coriander
    • 2 tsp salt
    • Oil for frying
    • cilantro, chopped (for garnish)

To Prepare

    1. Heat oil in pan, add dried chilis and cumin seeds, fry on medium heat until seeds have cracked
    2. Add onions, fry until translucent, and add garlic
    3. Continue frying, adding oil as needed, until garlic begins to brown
    4. Add turmeric, chili powder, coriander and salt, then fry until garlic is golden brown
    5. Add 1 chopped tomato and sauté until soft and integrated.
    6. Add potatoes, sear, and add ½ remaining chopped tomato. Cook until tomatoes soften.
    7. Garnish with cilantro, stir, and serve.
