Aloo Jeera (Potato Cumin)
Ingredients
- ½ medium onion, chopped
- 4 cloves garlic, minced
- 1½ tomato, chopped
- 1 potato, boiled and cubed
- 2-3 dried chilis
- 1 T cumin seeds
- 2 tsp ground turmeric
- 2 tsp chili powder
- 2 tsp ground coriander
- 2 tsp salt
- Oil for frying
- cilantro, chopped (for garnish)
To Prepare
- Heat oil in pan, add dried chilis and cumin seeds, fry on medium heat until seeds have cracked
- Add onions, fry until translucent, and add garlic
- Continue frying, adding oil as needed, until garlic begins to brown
- Add turmeric, chili powder, coriander and salt, then fry until garlic is golden brown
- Add 1 chopped tomato and sauté until soft and integrated.
- Add potatoes, sear, and add ½ remaining chopped tomato. Cook until tomatoes soften.
- Garnish with cilantro, stir, and serve.
