Ingredients
- 1 cup all-purpose flour
- 1¼ tsp baking powder
- ¼ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- ¾ cup half-and-half
- 6 T milk
- 3 T brown sugar
- 2 T butter, melted and cooled
- 1 egg, lightly beaten
- 1 tsp vanilla extract
- ½ tsp lemon zest
- ¾ cup fresh blueberries
- Confectioner's (powdered) sugar
To Prepare
- Combine flour, baking powder, cinnamon, nutmeg, and salt in a large bowl
- In another bowl, combine half-and-half, milk, brown sugar, butter, egg, vanilla an lemon zest
- Pour wet ingredients into dry and stir until just blended
- Fold in blueberries
- Cover with a towel and let the mixture rest for 20 minutes
- Cook over medium-low heat in a pan greased with butter
- As the pancakes cook, bubbles will begin to form on top. Flip each pancake when those bubbles start to pop
To Serve
While the pancakes are still hot, sprinkle confectioner's sugar on top to form a delicious glaze.
