About 6 large muffins

Dry Ingredients

    • 1¾ cups flour
    • ¾ tsp baking soda
    • ½ tsp salt
    • ¾ cup sugar
    • 1¼ tsp cream of tartar

(Note: You can substitute the baking soda and cream of tartar with 2 tsp baking powder.)

Wet Ingredients

    • 2 eggs, beaten
    • ½ cup vegetable oil
    • 2 ripe bananas, mashed

To Prepare

    1. Mix wet ingredients and dry ingredients separately
    2. In a large bowl, pour wet ingredients into dry and mix
    3. Spoon batter into greased muffin pans, filling three-fourths full
    4. Bake at 400 degrees for 18 minutes or until golden brown
    5. Remove from pans immediately and let cool on a wire rack
