About 6 large muffins
Dry Ingredients
- 1¾ cups flour
- ¾ tsp baking soda
- ½ tsp salt
- ¾ cup sugar
- 1¼ tsp cream of tartar
(Note: You can substitute the baking soda and cream of tartar with 2 tsp baking powder.)
Wet Ingredients
- 2 eggs, beaten
- ½ cup vegetable oil
- 2 ripe bananas, mashed
To Prepare
- Mix wet ingredients and dry ingredients separately
- In a large bowl, pour wet ingredients into dry and mix
- Spoon batter into greased muffin pans, filling three-fourths full
- Bake at 400 degrees for 18 minutes or until golden brown
- Remove from pans immediately and let cool on a wire rack
