粉絲雜菜 Cellophane Noodles Mixed Vegetables

Ingredients

    • 1 small pack of cellophane noodles, soaked in warm water for 1 hour
    • 2 T dried shrimp, soaked in warm water for 1 hour (optional)
    • 1 inch of ginger, peeled and minced
    • 3 cloves garlic, chopped
    • ½ 節瓜 (hairy gourd), julienned
    • ½ large carrot or ¼ small pumpkin, julienned
  • ½ potato, peeled and julienned (optional)
  • 2 tsp salt
  • 1 T sugar
  • 2 T soy sauce
  • 2 T oyster sauce
    • oil for frying

To Prepare

    1. Heat oil in skillet, fry ginger until beginning to brown
    2. Add garlic, dried shrimp,hairy gourd, a bowl of water, salt, sugar, soy sauce, and oyster sauce
    3. Cover, bring to a boil, and add pumpkin / carrot / potato
    4. Cover and bring to a boil once more, cook for a minute, and add soaked cellophane noodles
  1. Cover and cook for 2 minutes
