粉絲雜菜 Cellophane Noodles Mixed Vegetables

Ingredients
- 1 small pack of cellophane noodles, soaked in warm water for 1 hour
- 2 T dried shrimp, soaked in warm water for 1 hour (optional)
- 1 inch of ginger, peeled and minced
- 3 cloves garlic, chopped
- ½ 節瓜 (hairy gourd), julienned
- ½ large carrot or ¼ small pumpkin, julienned
- ½ potato, peeled and julienned (optional)
- 2 tsp salt
- 1 T sugar
- 2 T soy sauce
- 2 T oyster sauce
- oil for frying
To Prepare
- Heat oil in skillet, fry ginger until beginning to brown
- Add garlic, dried shrimp,hairy gourd, a bowl of water, salt, sugar, soy sauce, and oyster sauce
- Cover, bring to a boil, and add pumpkin / carrot / potato
- Cover and bring to a boil once more, cook for a minute, and add soaked cellophane noodles
- Cover and cook for 2 minutes
