Velveeta Macaroni and Cheese

Ingredients

• 2 cups macaroni (8 oz package)
• 16 oz package Velveeta cheese (about 2¼ cups), cubed
• 2 cups milk (or soy milk)
• ¼ cup butter (60 grams)
• ¼ cup flour
• 1 tsp salt
• 1 egg, beaten

To Prepare

1. Cook macaroni per package directions, then drain and set aside
2. Melt the butter in a saucepan over low heat, add the flour, stir until smooth, and cook one minute while stirring constantly
3. Gradually add milk to the mixture, raise the temperature to medium heat, stir constantly while cooking until thick and bubbly
4. Add salt and 2 cups of Velveeta, stir until cheese is melted
5. Remove one cup of the mixture and pour into beaten egg
6. While stirring constantly, pour the egg mixture back into the saucepan
7. Stir cheese sauce into macaroni, pour into a greased 1¾-quart baking dish, and top with remaining Velveeta cubes
8. Bake at 350 degrees Fahrenheit for 35 minutes
