Manu's Red Skin Potato Salad

Ingredients

    • 2 lbs red skin potatoes
    • 2 cups mayonnaise or Miracle Whip
    • ½ cup cider vinegar
    • 1 tsp salt
    • ¼ tsp pepper
    • 2 cloves garlic, minced
    • ¼ cup red onion, chopped
    • ½ cup parsley, chopped
    • ¼ cup scallions, chopped
    • ¼ tsp cayenne pepper

To Prepare

    1. Cook the potatoes in boiling salted water for 20-30 minutes or until
    2. tender (but not falling apart); drain (Gray's alternate: steam the potatoes, uncut and unpeeled, for 20 minutes)
    3. Rinse with cold water and allow to cool completely
    4. Cut into ¼" cubes and place in a large bowl
    5. Add scallions, onions, parsley, and ¼ cup vinegar to the cubed potatoes
    6. Toss and place in the refrigerator to cool for one hour
    7. To make the dressing, combine the remaining vinegar with the mayonnaise/Miracle Whip, salt, pepper, garlic, and cayenne pepper
    8. Remove the potatoes from the refrigerator, add the dressing, and toss
    9. Return to the refrigerator for at least 6 hours before serving
