("Mimi")

Two 9" pie pans

Ingredients

    • 2 cups sugar
    • 2 T Hershey's cocoa
    • ½ cup evaporated milk
    • 2 T white corn syrup
    • 2 T butter
    • 1 tsp vanilla extract
    • dash of salt
    • two 9" pie pans

To Prepare

    1. Thoroughly combine the sugar, cocoa, and salt
    2. Add the evaporated milk and corn syrup; mix well
    3. Cook the mixture in a medium-sized saucepan on medium heat (do not use high heat - the sugar will burn), without stirring, until the temperature reaches 234 degrees Fahrenheit.
  1. Remove from heat; add the butter and vanilla, but do not stir
  2. Allow the mixture to cool inside the saucepan until about 220 degrees Fahrenheit, then beat with a wooden spoon until the fudge looses some gloss
  3. Quickly pour into greased pie pans, just enough to cover the bottom of each (resulting in thin layers of crispy fudge)
  4. Allow to cool completely before serving
