Maple Cornbread (Northern)

This is a northern cornbread (characterized by it's higher sweetness and lower density when compared with southern cornbreads).
Ingredients
- 1 cup unbleached white flour
- 1 cup stone-ground yellow cornmeal
- 1 T baking powder
- ½ tsp salt
- 2 eggs
- ⅓ cup pure maple syrup
- ⅔ cup milk (or soy milk)
- ⅓ cup melted butter (or vegetable oil)
To Prepare
- Preheat oven to 400°F / 200°C
- Sift together flour, cornmeal, baking powder and salt in a medium bowl.
- Break the eggs into a smaller bowl and whisk well. Whisk in the maple syrup, milk and melted butter or oil.
- Pour wet ingredients into dry and combine. Scrape the batter into a greased or non-stick, 8-inch square pan and bake until golden brown (about 22-25 minutes).
