Maple Cornbread (Northern)

This is a northern cornbread (characterized by it's higher sweetness and lower density when compared with southern cornbreads).

Ingredients

    • 1 cup unbleached white flour
    • 1 cup stone-ground yellow cornmeal
    • 1 T baking powder
    • ½ tsp salt
    • 2 eggs
    • ⅓ cup pure maple syrup
    • ⅔ cup milk (or soy milk)
    • ⅓ cup melted butter (or vegetable oil)

To Prepare

    1. Preheat oven to 400°F / 200°C
    2. Sift together flour, cornmeal, baking powder and salt in a medium bowl.
    3. Break the eggs into a smaller bowl and whisk well. Whisk in the maple syrup, milk and melted butter or oil.
    4. Pour wet ingredients into dry and combine. Scrape the batter into a greased or non-stick, 8-inch square pan and bake until golden brown (about 22-25 minutes).
