Steamed Custard Buns
(aka 奶黃包)
Ingredients
- Steamed Bun Dough
- 55 grams butter, melted
- 30 grams (¼ cup) corn starch
- 40 grams (⅓ cup) custard powder
- 55 grams (½ cup) flour
- 55 grams (¼ cup) sugar
- 3 eggs
- 1 1/8 cup milk (or soy milk)
To Prepare
- Mix corn starch, flour, sugar, and custard powder
- Add eggs (one at a time, mixing thoroughly before adding the next)
- Melt butter and add to mixture
- Stir in milk
- Steam mixture for 18 minutes (stirring every 6 minutes)
- Allow mixture to cool, pour into plastic bag, and knead the bag until the mixture is smooth
- Refrigerate for 5 hours (or overnight)
- Wrap the bun dough around the filling and steam per linked instructions
