Ingredients for a Peach, Mango, Nectarine, Apricot, etc Base

    • 8-10 fresh pieces of fruit, peeled, pitted, and sliced
    • ¼ cup granulated sugar
    • 2 T cornstarch
    • 1 tsp cinnamon
    • ½ stick (50 grams) butter

Ingredients for a Blackberry Base

    • 8 cups blackberries
    • 4 T cornstarch
    • ½ cup cold water
    • 1 cup sugar

Ingredients for the Crust

    • 1½ cups all-purpose flour
    • ½ cup sugar
    • 2 tsp baking powder
    • ½ tsp salt
    • 1½ sticks (150 grams) butter
    • ¾ cup heavy cream

To Prepare Peaches, Mangoes, etc

    1. Place fruit slices in a mixing bowl
    2. Mix sugar, cinnamon, and cornstarch; sprinkle over fruit and stir
    3. Melt the ½ stick of butter in a skillet over medium-low hear and add the fruit mixture
    4. Cook gently until heated through (about 5 minutes)

To Prepare Blackberries

    1. Dissolve cornstarch in water
    2. Stir in sugar and blackberries

To Prepare Crust

    1. Mix together flour, sugar, baking powder, and salt
    2. Cut in the butter and flake with a fork until the mixture looks like coarse crumbs
    3. Stir in heavy cream and knead until a dough is formed

To Prepare Cobbler

    1. Preheat oven to 375° Fahrenheit
    2. Evenly pour fruit mixture into dish
    3. Roll out dough and place over fruit
    4. Bake for 45 minutes (or until top is nicely browned)
