Streusel Sour Cream Coffee Cake

Makes one 9x9 inch coffee cake

For the Cake

  • 1 stick unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 cups all-purpose flour
  • 1 cup sour cream, light or full fat

For the Streusel

  • 1/2 cup light brown sugar
  • 1/2 cup finely chopped walnuts
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla extract

Directions

Preheat your oven to 350 degrees F. Grease a 9x9 inch baking pan. Mix the flour, baking powder, salt, and baking soda together in a medium bowl. In a separate bowl, beat the sugar and butter together until well combined. Add the eggs and beat to combine.

Add the flour mixture and the sour cream to the mixture, alternating the flour and sour cream. Mix to combine well.

Mix the streusel ingredients together in a small bowl. Spread half of the cake batter in the baking pan. Top the batter with half of the streusel mixture. Spread the rest of the batter over the streusel layer. Top with the remaining streusel.

Bake the cake on the center rack of your oven for approximately 35 minutes. The coffee cake is done when a tester inserted in the center comes out clean.

You may serve the cake warm or at room temperature.
