Red Pepper Hummus

1 15 ounce can garbanzo beans, drained

1/4 olive oil

1 teaspoon fresh lemon juice

1 teaspoon cumin

1 garlic clove crushed

1/2 cup jarred red pepper

1 red onion sliced and caramelized

pinch of salt

pinch of cayenne

Directions

Caramelize the onions in a frying pan with 1 tablespoon of olive oil and 1 tablespoon of butter. Cook until soft and brown in color. Set aside to cool.

Mix the onions and all of the other ingredients together in the bowl of a blender or food processor. Puree until smooth. Taste for seasoning and adjust as needed. Serve with chips, crackers and pita.
