Parmesan Breaded Chicken

Serves 4

  • 4-8 bone-in chicken pieces (You can use boneless chicken breasts)
  • Prepared Italian dressing (I use Kraft Robusto Italian)
  • Italian seasoned bread crumbs
  • Grated Parmesan cheese

You'll notice that I didn't give you specifc amounts for this recipe. That's because it truly is just a little bit of this and a little bit of that. I'll walk you through it.

First, rinse and pat dry your chicken pieces. Place the chicken pieces in a glass dish or a zipper closure plastic bag. Pour enough prepared Italian dressing over the chicken to coat. Refrigerate for at least one hour and up to overnight. Do this ahead and you can make this recipe easily for dinner on a week night after work.

Preheat the oven to 375 degrees F. In a shallow dish place equal parts Italian seasoned bread crumbs and Parmesan cheese. I usually start with 1/2 cup of each. Mix them together.

Roll the chicken pieces in the bread crumb mixture, one piece at a time, making sure to fully cover each piece with the bread crumbs and cheese. Place on a shallow baking pan. I like to line my baking pan with aluminum foil for easy cleanup.

Bake the chicken for 45-50 minutes or until the chicken is well browned and registers 180 degrees with an instant read thermometer.

Serve this chicken with your favorite sides. I like to serve it with a salad and a green vegetable.
