Green Beans with Onions and Garlic

  • fresh green beans, stem end trimmed
  • 1 small red onion, sliced
  • 1 large garlic clove, minced
  • 2 Tablespoons olive oil
  • salt and pepper to taste

Directions

Fill a medium sauce pan with water. Bring water to a boil. Add the green beans and cook for 2 minutes. While the beans are cooking fill a bowl with ice and water making an ice bath. Drain the beans and place them all at once into the ice bath. Cool the beans. Drain them and set aside.

In a large frying pan, heat the olive oil and garlic together. Cook for one minute. Add the onions all at once. Season with salt and pepper. Cook the onions for 3 minutes. Add the beans and toss with the onions to cover with oil. Cook for 3-5 minutes until desired level of doneness is reached. Taste for seasoning and add salt and pepper, if needed. Serve hot.
