Greek Inspired Baked Cheese Appetizer

Serves 6 to 8

    • 1 15 ounce can of petite diced tomatoes, drained
    • 4 ounces Feta cheese, chunked
    • 4 ounces cheddar cheese, shredded
    • 1 cubanelle pepper, chopped
    • 1/2 medium red onion, chopped
    • 1 clove garlic, minced
    • 1 teaspoon dried oregano

Directions

Preheat the oven to 350 degrees F. Mix together the tomatoes, pepper, onion, oregano and garlic. Place half of the mixture in a medium ceramic baking dish. Top with half the Feta and half of the cheddar cheese. Repeat the layers. Cover the baking dish and bake the mixture until fragrant, hot and gooey, about 30 to 45 minutes. Serve with crackers and crusty bread.
