Blue Cheese Bacon Burgers

Makes 6 hamburger patties

  • 1 pound 80% ground beef
  • 1/2 cup chopped onion
  • 2 ounces bacon, diced
  • 2 ounces crumbled blue cheese
  • 1 large egg white
  • 1/3 cup mayonnaise
  • 1/3 cup seasoned bread crumbs
  • 1 tablespoon fresh chopped parsley
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Directions

Cook the diced bacon in a skillet over medium heat until crisp. Remove from the pan ans drain the bacon on a paper towel. Leave one tablespoon of the bacon fat in the pan and add the chopped onion. Cook the onion until soft and tender. Remove the onion from the pan to cool. Cool both the bacon and onion completely.

Place the remaining ingredients in a medium bowl. Add the cooled bacon and onion. Using your clean hands, mix the ingredients together until well combined. Divide the mixture into six portions and form into patties. Cover and refrigerate for at least one hour before grilling.

Grill the hamburgers to your preferred level of doneness. Serve on a grilled bulkie roll topped with your favorite condiments.
