Directions
Cut your tomatoes into chunks and slice the onion. I like my onion slices very thin.
Place the tomatoes and onions in a bowl. Stack the basil leaves together, roll them into a cigar shape and slice them into ribbons. Add to the bowl of tomatoes. Cut the mozzarella cheese into chunks and add to the bowl.
Mix the extra virgin olive oil, red wine vinegar, salt and pepper together in a small bowl. Pour over the tomato mixture and toss with two sppons. Cover and refrigerate for at least two hours and up to 24 hours. Stir before serving to distribute the flavors.
