Anadama Bread

Ingredients

Note: This is my nana's recipe. Her recipes were always short on details.

· ½ c corn meal

· 2 c boiling water

· 2 T. shortening

· ½ c molasses

· 1 tsp salt

· 2 ¼ tsp active dry yeast, or 1 cake yeast dissolved in ½ c warm water

· 5 c flour

Directions:

Stir corn meal into boiling water. When mixed, add shortening, molasses and salt.

Cool. When lukewarm add dissolved yeast and the flour.

Knead well, approximately 10 minutes and keep in warm place. Let rise until more than double in bulk.

Shape into two loaves and let rise again.

Bake in hot oven, 350° F for one hour. Cool completely before cutting.
