Chocolate Mug Cake

Serves one

  • 4 tablespoons all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 1/2 teaspoons cocoa powder
  • 1 large egg
  • 4 tablespoons fat free milk
  • 2 tablespoons vegetable oil
  • a few chocolate chips, I use Ghiradelli double chocolate chips
  • a few drops of vanilla extract
  • Confectioner's sugar, for garnish
  • Ice cream

Directions

In a small bowl or your mug, mix together the dry ingredients until well combined. Mix together the egg, milk, oil and vanilla extract until well combined.

Add the egg mixture to the dry ingredients in the mug, stirring well to be sure all the dry ingredients are incorporated and the mixture is smooth. Drop the chocolate chips into the center of the mug.

Place your mug in the center of your 1000 watt microwave. Set the timer for three minutes and cook your mug cake on high power. It will rise up over the edge of the mug and then settle down.

Remove the cake from the microwave and turn it out onto a plate. Sprinkle with powdered sugar and serve with your favorite ice cream.
