Chicken Salad Sandwich Recipes
Quick and Easy Chicken Salad
Serves 4
Calories: 90
- 2 cups cooked chicken breast, cut in 1/2 inch chunks
- 1 celery stalk, finely diced
- 1 T light mayonnaise
- 2 T Light Miracle Whip salad dressing
- Salt and pepper to taste
Mix the chicken and celery together in a bowl. Season with salt and pepper to taste. Add the mayonnaise and Miracle Whip. Mix well, chill, enjoy. Some of you may not be fans of Miracle Whip, but I think it adds some zip to the chicken salad that mayonnaise alone does not. This is how I make my chicken salad all the time and my youngest son tells me it is "slammin' ". That's good enough for me! Serve it on a 100 calorie Arnold Sandwich Thin roll and you've got a 190 calorie lunch sandwich.

Donna's Spicy Chicken Salad
Serves 4

- 2 cups cooked chicken breast, shredded or cut into 1/2 inch chunks
- 1 celery stalk, finely diced
- 1 T blue cheese salad dressing
- 2 T Light Miracle Whip salad dressing
- 1-2 tsp hot pepper sauce (I use Frank's Red Hot Sauce)
- 1/8 tsp chili powder
- 1/8 tsp cayenne pepper
- 1/8 tsp onion powder
Mix everything except the diced chicken and celery together in a bowl. Toss the chicken and celery together in a bowl. Add the salad dressing mixture, stir to combine. Serve on a 100 calorie Arnold Sandwich Thin roll for a 204 calorie sandwich.
