Baked Cod

Serves 4

  • 1 1/2- 2 pounds cod fillets
  • 1 lemon, zested
  • 1/2 cup fresh bread crumbs
  • 1/2 cup panko
  • 2 tablespoons fresh parsley chopped
  • 3 tablespoons unsalted butter
  • salt and pepper to taste

Directions

Preheat the oven to 375 degrees F. Rinse the cod fillets and pat them dry. Place the fish in a buttered casserole dish. Sprinkle the fish generously with salt and pepper. Squeeze the juice of the lemon over the fillets.

In a small bowl, melt the butter in your microwave oven. Add the bread crumbs, panko, chopped parsley and lemon jest. Using a fork toss the mixture together until well blended. Spoon the mixture over the cod fillets.

Bake the cod, uncovered, on the center rack of your oven for 20-25 minutes until the bread crumbs are browned and crispy and the fish flakes easily.
