Grilled Vegetable Medley

Serves four to six as a side-dish.

Ingredients

  • 1 medium zucchini or 2 small zucchinis
  • 1 medium eggplant
  • 1 large red pepper
  • 1 medium onion
  • 1/2-cup oil-based Italian salad dressing

Directions:

Cut the vegetables into chunks. Place them together in a large bowl. Toss the vegetables with the salad dressing. Set aside for one hour. Heat your outdoor grill to very hot. Spray a grill basket with oil spray. Place the vegetables into the grill basket and place the basket on the grill. I like to turn off one burner of my gas grill and place the basket there. Close the grill cover. Turn the vegetables every five minutes until cooked through, about 20 minutes. Return the vegetables to the marinade bowl and toss again to pick up any dressing that was left in the bowl. Cover and set aside until ready to serve.
