Steak with Mushroom Sauce

Serves 4

  • 4 servings of steak, approximately 1/2 pound per person
  • 1 stick unsalted butter
  • 1 pound mushrooms, sliced
  • 1-3 cloves garlic, chopped
  • 3 scallions, sliced, whites and green parts
  • 1 cup red wine, your choice (I used Pinot Noir)
  • 1/2 cup fresh parsley, chopped
  • salt and pepper to taste

Directions

Heat two tablespoons of butter in a heavy skillet over medium high heat. I used a cast ion skillet. Salt and pepper your steaks and put them in the hot pan. Cook the steaks to your desired doneness. Remove the steaks from the pan, to a separate dish and cover to keep warm.

Add the rest of the butter to the same pan you cooked the steak in. When the butter is melted and sizzling add the mushrooms, garlic and scallions. Stir to distribute and then don't touch them for a minute or two. You want your mushrooms to brown. This will take 3 to 5 minutes.

Stir the mushrooms, add the red wine and cook until the wine reduces and thickens. Add the parsley.

Plate the steaks and top with the mushroom sauce. Serve with whatever side you like. I served my steaks with fresh green beans sauteed with garlic and red onions and new red potatoes tossed with butter and parsley. Quick...easy...delicious.
