Pesto Shrimp Alfredo
Serves 4-6
- 1 pound pasta of choice, linguine or angel hair is perfect
- 1 stick unsalted butter
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/3 cup pesto
- 1/2 teaspoon pepper
- salt to taste
- 1 pound shrimp
In a large pot, start the water for the pasta. Cook pasta to time readiness along with the sauce. In a large skillet melt the butter over medium heat and stir in the cream. Bring to a boil and reduce to simmer. Cook for 6 to 8 minutes stirring constantly.
Stir in the Parmesan cheese. Add the pesto and cook 3 to 5 more minutes. Taste and add salt and pepper as needed.
Add the shrimp to the bubbling sauce. Cover the pan and cook for 3 to 5 minutes until shrimp is pink. Drain the pasta and add to the pan. Toss the sauce and pasta together. Serve immediately.
