Pineapple Cucumber Smoothie

Serves 1

  • 1/2 cup pineapple chunks
  • 1/2 cup cucumber, peeled, seeded and chunked
  • 1/2 small red beet
  • 1/2 small banana
  • 2 medium strawberries
  • 1 Tablespoon flaxseed meal
  • 1/4 cup pomegranate juice
  • 1/4 cup packed kale
  • 1/2 cup almond milk, unsweetened

Directions

Place the ingredients in your single serving blender in the order listed. Blend on high for 20-30 seconds, until smooth. Use frozen fruit and cucumber for a thick smoothie.
