Joanne's Cherry Cheesecake

Serves 10- 12

  • 3 packages of lady fingers, split
  • 1 pint heavy cream
  • 1 cup granulated sugar
  • 1 1/2 cans cherry pie filling
  • 1 teaspoon vanilla
  • 8 ounces cream cheese, softened

Directions

Line the bottom and sides of a spring form pan ( I used a 10 inch pan) with the split lady fingers.

Mix the cream cheese, vanilla and sugar together in a bowl until smooth and creamy. Set aside. In a separate bowl beat the cream until stiff. With a spatula, fold the cheese mixture into the whipped cream.

Layer one half of the cream and cheese mixture over the bottom layer of lady fingers. Place a second layer of lady finger on top of the cream mixture. Then spread the remaining cream and cheese mixture on top of the lady fingers. Top with the cherry pie filling to cover the surface. Place the cherries in an attractive arrangement so that your finished cake will look as yummy as it tastes.

Refrigerate overnight. Slice...serve...enjoy...
