Caramelized Onion, Proscuitto and Ricotta Pizza

Ingredients

  • 1 pizza dough
  • 4-6 ounces ricotta cheese
  • 6-8 slices prosciutto
  • 2 Tablespoons butter
  • 2 large onions
  • salt and pepper
  • 1/2 tsp cayenne pepper
  • parchment paper

Early in the day. Make your pizza dough, ricotta cheese and prepare the caramelized onions.

Cut onion in half and slice thinly. Heat butter in large frying pan over medium heat. Add onion, cayenne, salt & pepper and saute for 10 minutes. Reduce heat to medium low and cook, stirring occasionally for 20 minutes more, until onions are browned and caramelized. Cool.

Place your pizza stone on the bottom rack of the oven. Preheat your oven to 500°F. Place your pizza dough on parchment paper and form into a round. I use my fingers to press the dough into shape.

Next sprinkle on a little bit of olive oil. Not too much, this is just for an added taste dimension.

Now it's time to add your very delicioso home made ricotta cheese. Just put dollops all over the pizza. If you don't have homemade ricotta cheese you can use store bought ricotta, or fresh mozzarella. Both will work. Next, spread the caramelized onions around the pizza.

Then it is time to add the prosciutto. Six or eight slices should do it, but use as much as you want.

Sprinkle with some freshly grated Parmesan cheese for a little added flavor boost and transfer the pizza and parchment paper to your pizza stone. Cook for 12 minutes, or until the crust is browned and crispy. Remove from the oven and let sit for 10 minutes before serving.

This pizza is also delicious cut into squares and served as an appetizer.
