Baked Buffalo Wings

  • 4-5 lbs chicken wings, cut into pieces
  • 1/3 cup butter, melted
  • 1/2 cup Frank's RedHot Original sauce
  • Blue cheese dressing
  • Celery sticks

Let's take a minute before we get into the recipe to talk about preparing the chicken wings. You can usually buy four or five pound packages of chicken on sale at your local grocery store. The wings will have three sections that need to be separated. The top portion, or tip can be easily separated from the rest of the wing at the joint with a good, sharp knife. Discard the tips or freeze them to use later in a chicken stock.

Next, separate the flat portion from the drum portion at the joint.

Preheat the oven to 425 degrees F. Sprinkle the wings with a couple of tablespoons of vegetable oil and season with salt and pepper. Lay the wings out on a baking sheet. Bake the wings on the center rack of the oven. After 30 minutes, turn the wings to brown the other side of each. Continue baking for another 30 minutes.

Remove the wings from the oven. Melt 1/3 cup of butter in the microwave. Add 1/2 cup of Frank's hot sauce to the butter, stirring to combine. Place the wings in a large bowl and pour the sauce over them, tossing to coat all the wings. Serve with blue cheese dressing and celery sticks.
