Congo Bars

Makes 24 large bars or 48 small bars

  • 2 1/2 cup all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup shortening (I use unsalted butter)
  • 2 1/4 cups packed brown sugar
  • 3 eggs
  • 1 cup chopped walnuts
  • 2 cups chocolate chips

Directions

Mix together the flour, baking powder and salt. Set aside. Melt the shortening/butter. Stir in the brown sugar and allow to cool slightly. Beat in the 3 eggs, one at a time. Add the flour mixture, chopped nuts and chocolate chips. Mix to combine.

Spread the batter on to a greased 10x15 inch sheet pan. Bake for 25-30 minutes. Don't overbake. These are better under done than over done
