Red Snapper Filet with Mediterranean Salad

(Yield 4 people)

Mediterranean Salad

1 small can artichokes quartered

½ red onions sliced thin

2 tsp capers

½ cup sliced Greek olives (Kalamata)

3 ea roasted red tomatoes

Feta Cheese

Fresh Basil

Fresh Oregano

1 cup red wine vinegar

3 cups extra virgin olive oil

1 garlic clove minced

1 tps lemon juice

2-3 oz red snapper filet skin on

Score skin side of fish

Add salt and pepper to fish

Combine garlic, red wine vinegar, lemon juice, 2 cups of olive oil, oregano, and basil

Toss the artichokes, red onions, capers, tomatoes, feta cheese, and olives. Add red wine vinegar; season with salt and pepper to taste.

Pre-heat sauté pan, add oil, sear fish skin side up, cook until done. Add salad garnish with balsamic drizzle and extra virgin olive oil.
