Pie Filling Suares

  • 2 sticks unsalted butter, at room temperature
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • lemon pie filling (or use a lemon pudding mix)

Directions

Preheat the oven to 350 degrees F. Cream together the butter, and sugar until light and fluffy. Add the eggs, one at a time, beating after each addition. Add the vanilla.

Mix together the flour, salt and baking powder. Add the flour mixture to the butter mixture, stirring well to combine.

Spread 3/4 of the batter onto a greased 10 x 15 inch rimmed baking sheet. Spread the pie filling over the batter. Spoon the remaining batter over the top of the pie filling. The batter on the top will be like little islands over the pie filling.

Bake for 40-45 minutes until the squares are lightly browned. Cool completely and cut into squares.
