Strawberry Coconut Baked Oatmeal

What you need:

• 2 cups sliced strawberries, divided [I used fresh]
• 1/4 cup canola oil
• 1/4 cup sugar
• 1 egg
• 3 cups old-fashion oats
• 1 Tbsp. baking powder
• 3 Tbsp. chia seeds
• 1/3 cup + 2 Tbsp. sweetened coconut flakes
• 1 1/4 cups coconut milk

Directions:

1. In a greased 9-inch pie pan, add 1 1/2 cups sliced strawberries to the bottom evenly.
2. In a bowl, mix together oil, sugar, and egg.
3. In a separate bowl, mix together oats, baking powder, chia seeds, and 1/3 cup coconut flakes.
4. Fold oat mixture into egg mixture.
5. Add coconut milk and stir until combined.
6. Pour over the top of the strawberries.
7. Top with remaining strawberries and coconut flakes.
8. Bake in the oven at 350* for 30 minutes or until golden brown.
