Dark Chocolate Peppermint M&M Cookies

What you need:

    • 1 1/2 cups all-purpose flour
    • 1/2 cup Special Dark cocoa powder
    • 3/4 tsp. baking soda
    • 1/2 tsp. salt
    • 2 Tbsp. instant coffee crystals
    • 1 stick butter, softened
    • 1 1/2 cups granulated sugar
    • 2 eggs
    • 1 tsp. vanilla
    • 1 cup white chocolate peppermint M&Ms
    • 1 cup semisweet chocolate chips

Directions:

    1. Mix together flour, cocoa powder, baking soda, salt, and coffee in a bowl. Set aside.
    2. Cream together butter and sugar.
    3. Then add eggs and vanilla and mix until combined.
    4. Add flour mixture to butter mixture and mix until combined.
    5. Stir in M&Ms and chocolate chips.
    6. Chill dough for 30 minutes.
    7. Scoop dough with a cookie scooper onto a parchment-lined or Silpat-lined cookie sheet.
    8. Bake at 350* for 10 to 12 minutes. Rest for 2 minutes on cookie sheet before removing to wire rack to finish cooling.
    9. Note: You can also add some M&Ms to the top of each scoop after putting them onto the cookie sheet if you want. I didn't do this though.
