Sausage & Pea Pasta

What you need:

    • 1 lb. medium shell pasta
    • 2 Tbsp. EVOO
    • 1 small onion, finely diced
    • 1 lb. sage pork sausage
    • 1 cup frozen sweet peas
    • Salt and pepper, to taste
    • Crushed red pepper flakes
    • 1/2 cup pesto sauce

Directions:

    1. In a large pot, cook shells al dente according to box directions with frozen peas added.
    2. Meanwhile, heat olive oil in a large skillet over medium-high heat and saute onions for about 3 minutes.
    3. Add pork sausage and crumble as it browns.
    4. Season with salt, pepper, and red pepper flakes to taste.
    5. Drain pasta and peas, then return to pot.
    6. Stir in pesto until pasta and peas are well coated.
    7. Add sausage and onions and stir until combined.
